Tropical Baked Chicken With Black Rice and Tomatoes

Tropical Baked Chicken With Black Rice and Tomatoes


  • 2-4 thin sliced chicken
  • 1 Cup of black rice
  • Sliced mangoes
  • Carrots
  • Asparagus
  • Grape tomatoes
  • 2 tablespoon soy sauce
  • 1 teaspoon rosemary seasoning
  • 1 teaspoon sea-salt
  • 1 teaspoon black pepper
  • 2 tablespoon Almond oil


  1. In a small pot, cook your black rice until its soft and tender for about 30 minutes -40 minutes.
  2. Season your chicken with soy sauce, salt, rosemary, black pepper and allow to marinate for about 30 minutes.
  3. After 30 minutes, wrap each chicken with mangoes, asparagus, and carrots (1 of each)
  4. Preheat your oven for 380 degrees and once the oven is ready, bake your chicken wrap for 15-20 minutes or until the chicken is done, don't allow it to over cook so you have to monitor the chicken.
  5. Dice your grape tomatoes in half, in a small frying pan, fry in almond or coconut oil for about 5 - 10 minutes or until they a slight soft. Seasoning with 1 teaspoon of black pepper and salt.
  6. Remove your chicken from the oven and serve immediately, with rice, and sautéed tomatoes.
