In a pot, over medium heat, chicken broth, onions, salt, crushed red pepper, black pepper, parsley leaves. Cook for about 20 minutes until chicken in tender.
After the chicken is done, Strain gravy sauce in a fine mesh strainer into a small saucepan or bowl.
Over medium heat, in a small pan, add olive oil and fry the onions, red and green peppers for 5 minutes. Add about 1/2 cup of the chicken broth into the pan. Add white wine and allow to cook for about 5-10 minutes. Gently stir. Add salt and pepper for taste if needed.
When done, serve immediately over the chicken and enjoy.
