Sweet red peppers
1 Tsp salt
Non stick pam cooking spray
Full a pot with 1 or 1/2 cups of water and boil.
Slice the potatoes and place it into the pot. Boil for 10-15 minutes over medium high heat.
Once the potatoes are soft, drain the water and place the potatoes to the side. Cut the potatoes into small cube size like.
Spray the skillet with the non stick pam oil. Allow the skillet to heat up over a medium heat and place the potatoes into the skillet. Press down on the potatoes until its flattened. Wait about 2-3 minutes before cracking the eggs over. Add the eggs.
Finely dice the parsley and tomatoes and add into the skillet then add the smoked salmon.
Cover the skillet for about 2 minutes. Allow the potatoes to the be crispy at the bottom and the eggs should have a nice poached form around it.
Once it's ready, remove from the stove and serve immediately.
