In a pot, add the following ingredients, 1/2 cup of oil, stewed tomatoes, cayenne pepper, sugar, cinnamon sticks, salt, garlic clove, and cilantro and cook for 20 - 30 minutes over low medium heat. Stir gently every 10 minutes.
Season your fish with salt and black peppers, fry or grill until fish has a golden texture and is cooked all the way through.
Dice onions and fresh spinach for serving. Service alongside with brown rice.
Once your tomato sauce is done, serve immediately with remaining dish and enjoy with soft tortillas.
