Fried Yams, Plantains with Sugar Peas

Fried Yams, Plantains with Sugar Peas

Ingredients

  • 1 Yam (sliced)
  • Almond Oil
  • Ripe plantains
  • 1/2 cube of maggi seasoning
  • Sugar peas (or regular peas)
  • 3-4 grape tomatoes (diced)
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1-2 cups of water

Instructions

  1. Slice your yams into 5-6 pieces, place in a pot and fill the pot half way with water and boil for about 20-25 minutes or until yams are soft.
  2. After yams are done, drain and place on a paper towel and air dry for 5 minutes before frying.
  3. Add 2 table spoon of almond oil in a small skillet  and fry the yams over medium heat. Fry each side for 2-3 minutes.
  4. Fry the plantains until each side are golden, remove from skillet and dry in paper towel to remove excessive oil from plantain.
  5. Add the diced tomatoes in the skillet, add maggie, cayenne pepper. While frying over medium heat, stir and mix for 15 minutes and serve over plantains (as above picture).
  6. Fry the peas in the remaining oil in the skillet for 5 minutes and serve.
