Grilled caribbean jerk seasoned sockeye salmon with sautéed shrimp with vegetable mix
1/2 pound of Sockeye salmon
1/2 pound of shrimp
1/2 a cup of Red kidney beans
2 tablespoon Caribbean jerk seasoning
1 teaspoon salt
1 teaspoon black pepper
1 table spoon of almond oil
Cook red kidney beans in a pot full of water for about an hour or until the beans are soft and tender. The beans takes a while to cook so don't rush it if you don't want to some under cooked beans.
Seasoning your salmon and shrimp with salt, Caribbean jerk seasoning, black pepper and add oil. Bake your salmon in the oven at 360 degrees for 20-25 minutes.
Fry the shrimp over a hot skillet at medium heat for 15 minutes.
Once your beans are ready, remove from stove and drain the water out. In a hot pan, add almond oil and allow it to heat. Add carrots, peppers, onions, spinach, and beans and fry over medium heat. Add a teaspoon of salt, and 1-2 tablespoon of honey for sweet tasting.
Remove your salmon from the oven. In a plate, serve Salmon over veggies mix and add shrimp on top.
