Grilled Soy Salmon with carrot & sweet potato soup and asparagus
Ingredients1/2 pound of Salmon
1/2 - 1 whole sweet potato diced up
1 cup of almond or coconut milk
1 teaspoon vanilla extract
1 tablespoon pure honey
2 - 3 tablespoon Soy sauce
1 teaspoon Salt
1 teaspoon paprika
CarrotsInstructionsSeasoning your salmon with salt, paprika, soy sauce bake in the oven at 380 degrees for 20-25 minutes.
After dicing your potatoes, boil in a pot with 3 cups of water for 30 minutes or until potatoes are soft.
In a food processor, include potatoes, diced carrots, honey, almond or coconut milk, and vanilla extract and blend until the mix has a smooth texture to it.
Remove your salmon from the oven. In a plate, serve the sweet potato/carrot soup with salmon and sautéed asparagus or veggies of your choice.
