¼ cup heavy vanilla almond milk (or whipped cream)
1 tablespoon butter
1 ½ - 2 tablespoon maple syrup
½ tablespoon real vanilla extract
Cut the potatoes into chunks and place in a large pot. Cover with cold water and let come to a boil. Turn down to medium-high and let cook for about 20-30 minutes, or until potatoes are fork tender.Drain water and add potatoes back to the pot. Add butter, almond milk or heavy cream, syrup and vanilla . Whip with a whisk, mashed, fork, or immersion blender.
In a small bowl, add whipped sweet potatoes, then granola and another scoop of sweet potatoes and sprinkle remaining granola on top of dish, serve and enjoy.
