Orange Chicken Plantain Bowl
Great meal prep recipe. This is a easy and simple recipe to make at home. Ideal for someone that's always on the go. If you are looking for a new style of chicken and dish to make.
Ingredients
- 1 1/2 Lbs of chicken breast fillet
- 1/2 cup of flour
- 2 Tbs coconut oil
- 1 navel orange
- 1/2 cup barbecue sauce
- 3 Tbs low sodium soy sauce
- 2 Tbs cajun seasoning
- 1 tbsp red pepper flakes
- Green onions (for garnishing)
- 1 ripped Plantain
Instructions
- Cut the chicken breast into small cubes. Seasoning with cajun seasoning. In a bowl or ziploc bag, toss the chicken inside the flour until the chicken is well coated.
- Turn the stove to medium high heat. Add coconut oil in a skillet and allow the oil to heat up. Add the chicken and fry on both sides until the chicken is golden on both sides.
- Remove the chicken when its done and set it aside in a paper towel to observe excessive oil.
- In a bowl, mix the BBQ sauce, soy sauce, red pepper flakes together. Squeeze the juice from the orange and continue to stir the sauce together.
- Add the chicken back into a skillet and add in the sauce. Cook it over a low heat for about 10 minutes. Toss the chicken and sauce together. Remove the chicken from the skillet once it's done.
- Peel the skin off the plantains and cut it into small like cube size. Fry the plantains until both sides are golden.
