Red Snapper With Strawberry Avocado Salsa

Red Snapper With Strawberry Avocado Salsa

Ingredients

  • 1 jalapeño pepper, finely chopped
  • 1/2 ripe avocado, diced
  • 3-4 strawberries, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon fresh lime juice
  • 1 teaspoon organic sugar
  • sea salt to taste
  • 4 6-ounce red snapper
  • 1 tablespoon sesame oil
  • Soft ripped plantains (sliced)

Instructions

    For the salsa:
  1. Mix jalapeño, avocado, strawberries, onion, cilantro, lime juice, sugar, and sea salt together in a bowl. Cover and set aside in the fridge until your dish is ready.
  2. Preparing plantains:
  3. Preheat a pan with olive oil over medium heat.
  4. Slice your plantains and fry each sides until both side has a gold texture to it. Since the plantains are soft you want to fry each side for about a minute or two.
  5. Remove the plantains from the stove and place it in a paper towel to remove excessive oil.
  6. To cook the fish:
  7. Preheat stove-top grill pan over high heat.
  8. Pat snapper dry then brush both sides with the oil; sprinkle with salt and pepper.
  9. Lay snapper on grill pan skin side down and cook 4-5 minutes on each side, turning once, until cooked through.
  10. Transfer the snapper to a serving plate and top with avocado-strawberry salsa, serve with plantains and other side of your choice.

  1. Good Evening, this looks fabulous! What was the side you used in the picture and is there a recipe to show what you did? My guesstimation is that your side is quinoa?
