Pineapple Chicken

Ingredients

  • 2 lbs. boneless chicken breasts (Substitute with shrimp if you don't eat chicken)
  • ½ cup pineapple (small chunks)
  • ½ cup water
  • ? cup soy sauce
  • ? cup light brown sugar
  • ¼ cup pineapple juice
  • 2 T. ketchup
  • 1 T. rice wine vinegar
  • ½ tsp. powdered ginger
  • ½ tsp Crushed red pepper flakes

Instructions

  1. Cut the chicken breast into small bite sizes pieces.
  2. Heat olive oil in a large skillet and add chicken (or shrimp). (Dispose any excessive oil from the chicken.) Cook/fry the chicken (shrimp) until lightly browned.
  3. Remove chicken (shrimp) from pan and set aside.
  4. In the same skillet, add remaining ingredients together and heat over medium heat until well blended and dissolved. Stir gently. (This should be for about 5 minutes)
  5. Add chicken (shrimp) back into pan with sauce and bring to a boil. Reduce heat and let the same and chicken simmer together for about 15-20 minutes uncovered.
  6. Once the pineapple chicken is ready, serve in a small serving plate. (Great with jasmine or brown rice).
