Prepare fillet and scallop by seasoning it with salt.
In a cooking pan, add olive oil and cook over medium high heat. Fry fillet first on both sides until golden. Make sure the fish is cooking all the way through before removing from stove.
Fry the scallops for about 5 minutes until both sides have a golden texture to it and is cooked all the way through. Cut the scallops to make sure its cooked all the way, if not continue to cook for about a minute or 2.
After removing the scallops and fillet from the stove, cut them up into small pieces, mix together and add crushed red peppers.
Chop up the mushrooms, spinach, grape tomatoes, and mangoes. In a serving bowl, mix all the veggies and fruit together, add olive oil and a pin of sea salt.
Meanwhile, mix the remaining ingredients together in a small bowl and warm for serving. (This will be served as a dip for the sandwich).
Toast/Warm up pita bread in the oven. Serve with Fillet/Scallop mix then add your mango spinach mix. You can top it off with the sauce or use the sauce as a dip instead.
