Spinach Salad With Pan Fried Peaches


  • 1-2 ripe peaches, pitted and quartered
  • 2 tablespoons vegetable or olive oil
  • 2 cups baby spinach
  • 1/2 small red onion, thinly sliced
  • 1 teaspoon salt
  • 1 teaspoon organic sugar
  • 1/2 teaspoon black pepper
  • 1/2 Smoked bacon, roughly chopped (optional)


  1. Preheat a pan to medium-high heat and add 1 tablespoon oil, fry the peaches on each side for about 2 minutes, gently tossing. Once the peaches are done and they have a slight golden tone to them remove from the pan and allow them to cool down.
  2. In a large bowl. Combine the spinach, onion, tomatoes, salt, sugar, pepper and olive oil. Mix together and then add the peaches.
