Sweet and Spicy Salmon with Pineapple Avocado Salsa

Sweet and Spicy Salmon with Pineapple Avocado Salsa

Ingredients

  • Pineapple Jalapeño Salsa
  • 1 pineapple
  • 1 avocado
  • 1 jalapeño (seeds removed)
  • 3 tsp lime juice
  • 1 tsp honey
  • 4 tsp cilantro, chopped
  • salt and red crushed pepper
  • Sweet & Spicy Salmon
  • 1 pound fresh salmon
  • pineapple rind (optional)
  • 1 tsp cajun seasoning
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 tsp brown sugar
  • salt and red crushed pepper

Instructions

  1. Pineapple Jalapeño Salsa
  2. Remove rind from pineapple and set aside for later.
  3. Chop pineapple and avocado into small pieces. Add together in a bowl.
  4. Remove seeds from jalapeño, as they contain most of the heat. Dice and add to pineapple and avocado.
  5. Add lime juice, chopped cilantro, honey, salt and pepper to mixture and stir.
  6. Cover salsa and allow it to sit in refrigerator for at least 1 hour.
  7. Sweet & Spicy Salmon 
  8. Set the oven on broil at high and allow to pre-heat.
  9. Place salmon in a baking dish.
  10. In a small bowl, mix together the cajun seasoning, garlic, chili powder, paprika, brown sugar, salt and pepper.
  11. Rub the mixture on top of the salmon.
  12. Place salmon in the oven for 8-10 minutes, watching carefully. Remove the salmon from the oven and serve immediately.
