Baked Chicken With Sweet & Chili Salsa

Easy and quick recipe to make for dinner with friends or a perfect dish to make for the week.


  • Pack of chicken drum sticks
  • 1-2 Tbs of salt
  • 1 Tbs black pepper
  • 1/2 bottle of asian sweet chili sauce
  • Pre-made fresh pico de gallo
  • Minced mushrooms
  • Fresh Parsley (for garnish)
  • Olive oil


  1. Pre-heat the oven at 375 - 400 degrees.
  2. Clean and remove the skin off the chicken (see the picture above). Season with 1 Tbs of salt and black pepper toss with olive oil.
  3. Place in a chicken in the pan and bake in the oven for 15-20 minutes or until the chicken is tender. Remove from the oven once it's done.
  4. Over a medium high heat, in a skillet add olive oil and allow the oil to heat up. Add in pico de gallo and mushroom mix. Heat up for 3 minutes the add in sweet chili sauce.
  5. Add in the chicken from the oven and toss the chicken in the sauce. Lower the heat and add in a pinch of salt over.
  6. Cover the skillet and cook for about 2-3 minutes. Once the chicken and sauce are ready, serve the meal in a serving dish and garnish with the fresh parsley.
