Garlic Butter Shrimp and Qunioa

Ingredients

  • 1 tbsp olive oil
  • 1/4 cup finely chopped onion
  • 3 tsp minced garlic
  • 1 cup uncooked quinoa
  • 1 tsp chili powder
  • 2 cups vegetable or seafood broth
  • 3 tbsp salted butter
  • 1 pound large shrimp
  • salt and pepper to taste
  • fresh parsley for serving
  • fresh lemon juice for serving

Instructions

    For the quinoa:
  1. In a nonstick pan, heat the olive oil over medium high heat. Add in the onion and garlic and saute until softened, about 5 minutes. Stirring constantly to prevent burning.
  2. Add the uncooked quinoa and 1 teaspoon chili powder. Add in ½ teaspoon of salt and pepper.
  3. Stir together for another 1 minute before adding the broth.
  4. Bring to a boil, cover the pan and cook for 15 minutes or until it's soft throughout.
  5. For the shrimp:
  6. In a separate pan, heat up a tablespoon of butter in a large skillet over medium high heat.
  7. Add the shrimp in the pan after the butter melts. Add in cajun seasoning, and a pinch of salt and pepper. Fry until the shrimp is golden brown on the outside.
  8. Add in 1 teaspoon garlic, ½ cup of broth, butter and stir together in the pan.
  9. Cook for 5 minutes or until the sauce and shrimp are ready. Stir together in the process to mix all the flavor.
  10. Time to eat:
  11. Bring the quinoa and shrimp together in one dish, top with fresh chopped parsley. Drizzle the sauce from the shrimp over the shrimp and quinoa. Serve immediately.
