Jerk Chicken and Shrimp Crunch Soft Tacos with Plantains
Ingredients
- 1/2 pound of small size shrimp
- Pack of skinless chicken thighs or tender
- 2 Tbsp of jerk seasoning
- 1 Tbsp minced fresh parsley or regular parsley flakes
- 1 Tsp curry
- A pinch of red crushed pepper
- Fresh Cilantro
- 1/2 pack of grape tomatoes
- Diced onions
- Olive oil
- 1 sweet plantain
- Hard shell corn tortilla
- Soft small tortilla
Instructions
- Clean and remove the the shell and tail from the shrimp and set aside. Cut the chicken into small pieces and remove any excessive fat from the chicken. Season both the chicken and shrimp with jerk seasoning, parsley, curry and red crushed pepper. Add olive oil and mix together. For the best flavor and taste, I recommend marinating this for 20-30 minutes.
- Add 2 Tbsp of olive oil into a skillet, heating at medium to high heat, wait 3 minutes and add in diced onions. Wait until the onions have a golden texture before adding the chicken.
- Add the chicken and fry for about 6 minutes or until the chicken is cooked completely. Once it's done remove from the stove and set aside. Repeat the same step for the shrimp.
- Cut the plantains and pan fry the plantains for 2 minutes each or until both side are golden. Remove the plantains from the skillet and cot with honey.
- Add chopped cilantros, onions and grape tomatoes into a small bowl. Mix together with oil and a pinch of salt and black pepper.
- Now its time to make your tacos, put the soft tortilla into the hard shell tortilla. Add chicken, shrimp and top with cilantro, tomatoes and onion mix. Add the plantains on the side.
