Season shrimp with cajun seasoning, adobo, black pepper and parsley together.
Set heat to medium high then spray cooking spray or add butter to skillet. Once skillet is hot, add shrimp and fry for about 10-15 minutes or until both sides of shrimp have a light brown coating to it.
Fry pancetta and spinach separately in a skillet, temperature at medium low.
Put butter in skillet and allow it to melt and pour egg whites and fry for about 2 minutes or until eggs are done. (Watch the egg and don't allow it to burn.)
Once done serve eggs, spinach, pancetta and shrimp over toasted muffin, and enjoy.
