Preheat a pan to medium-high heat and add 1 tablespoon oil, fry the peaches on each side for about 2 minutes, gently tossing. Once the peaches are done and they have a slight golden tone to them remove from the pan and allow them to cool down.
In a large bowl. Combine the spinach, onion, tomatoes, salt, sugar, pepper and olive oil. Mix together and then add the peaches.
