Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 (8 ounce) can pineapple chunks, drained
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes

Instructions:

  1. In a medium bowl, combine the chicken, cornstarch, salt, and pepper. Toss to coat.
  2. Heat the oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides.
  3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Add the pineapple chunks, chicken broth, soy sauce, brown sugar, cornstarch, sesame oil, ginger, and red pepper flakes to the skillet. Bring to a boil, then reduce heat to low and simmer for 10 minutes, or until the sauce has thickened.
