Ingredients

  • 1lb of large shrimp
  • 2 tsp. ground cumin
  • 3 Tbsp butter
  • 1 1/2 tsp kosher salt
  • 1 tsp. ground black pepper
  • 1 Tbsp of Italian seasoning
  • 1/2 cup fresh basil leaves
  • 6 medium tomatoes (cut into thin slices)
  • 2 tsp. honey
  • Box of pasta (your choice of preference)

Instructions

  1. Cook the pasta as instructed on the box. 15 minutes (or until the pasta is soft) in a boil water.
  2. Cut the tomatoes up into thin slices. Heat up a skillet over medium heat. Add in butter and allow it to melt.
  3. Add the tomatoes and the juice into the butter and simmer for 5 minutes. Season with black pepper, cumin, Italian seasoning and a pinch of salt.
  4. Add in shrimp (make sure you remove the tail from the shrimp prior to) stir together and add in 1 tsp of salt and a little bit of additional Italian seasoning. Cook in for about 5 minutes.
  5. Drain out the water from the pasta once ready and add the pasta into your shrimp sauce.
  6. Stir together and garnish with chopped basil leaves.

Ingredients

  • Thin sliced chicken breast
  • 2 tbsp cajun seasoning
  • 1 tbsp black pepper
  • 1 tbsp Lemon juice
  • 2 tbsp Worcestershire sauce
  • 1/2 C BBQ Sauce (sweet baby ray)
  • Fresh basil (diced)
  • small onions (diced)
  • pinch of salt

Instructions

  1. Pre-heat the oven to 400 degrees.
  2. In a small bowl, mix the BBQ sauce, cajun seasoning, pepper, lemon juice, worcestershire sauce, basil, and onions together.
  3. Season both sides of chicken with salt (very lightly).
  4. Dip chicken breast into the sauce and place on a baking rack.
  5. Bake the chicken in the oven for 15 minutes or until the chicken is cooked all the way through.
  6. Once the chicken is ready, remove from the oven. Serve immediately with a side of your choice. (I had a quinoa salad).
