  • 1/2 cup roughly chopped fresh cilantro

Instructions

  1. In a large bowl, stir together fish sauce, soy sauce, coconut milk, ginger, Sriracha, and sugar. Stir together gentle. Heat the sauce up in the microwave for 1- 2 minutes and continue to stir until the sauce blends together.
  2. Add chicken evenly in 2 ziploc bag, adding sauce in both bags and toss to coat. Cover and refrigerate for at least 2-4 hours (to maximize the flavors, 8 hours or better overnight)
  3. Preheat the oven at 400 degrees. Spray a pan with non stick spray. Add the chicken and bake for 20-30 minutes.
  4. Flipping occasionally, until the drumsticks are cooked through. (Dark meat will take longer to cook than light meat.)
  5. Once ready, transfer to a platter, scatter cilantro over hot chicken and serve sauce (Like chili or sauce), steamed rice and or steamed veggies.

  • 2 sweet potatoes
  • Avocado

  • Cherry tomatoes

  1. In a container, stir together all the ingredients except from the chicken and vegetables. Cut/trim off any fat off the chicken breasts.
  2. Add the chicken breasts in the mix and marinate in the fridge for about an hour or 2 hours. (if you are in a hurry, you can marinate the chicken for 30 minutes to an hour)
  3. While your chicken is the fridge, start preparing your vegetables.
  4. Over a medium high heat, add the walnut oil in a frying pan, add asparagus, mushrooms, and onions. Add sea salt, soy sauce, and honey and stir together. Allow to cook for about 5-10 minutes. 
  5. Remove your chicken from the fridge. 
  6. Spray the hot plate with a non sick frying oil. Place the marinaded chicken breasts on the hot plate and fry both sides until the chicken is tender and golden. (Make sure you keep an eye on the chicken)
  7. Do not throw out the marinade. After the chicken breasts are done, brush it on the chicken for serving.
